has been an integral member of a formidable list of Chicago bar programs since moving here in 2019. He developed an extensive knowledge of rum and sugarcane spirits from the legendary bar Hala Kahiki in River Grove, before working at The Aviary & bartending in their speakeasy, The Office. His career also includes time behind the bar at Ever, connected to the Two Michelin Star restaurant After. He has served as Bar Captain of Perilla Steakhouse & Lead Bartender at the One Michelin Star restaurant Galit.

Guy Carmeli

is the Mixologist for The Langham Hotel in Chicago, voted #1 Hotel Bar in the United States by USA Today in 2025. He has honed his expertise at some of Chicago’s most respected establishments, including The Aviary and The Office, where he expanded his knowledge of spirits, Amari, fortified wines, liqueurs, and bitters. Most recently, he was a bartender at The Violet Hour, the James Beard Award-winning cocktail bar that sparked the craft cocktail revival in Chicago. Ryan was an integral part of the bar team when The Violet Hour was named most creative cocktail bar in the United States by Food & Wine Magazine in 2023. That same year, he was recognized as one of Chicago’s Best Bartenders by Chicago Drinks Guide.
